Ingredients
1 flour tortilla
1 Egg (you could use egg beaters)
1 tbspoon 2% cheese
1 tbspoon salsa
BREAK egg into center of tortilla. BEAT egg gently with a fork until blended, being careful not to tear tortilla. ( I beat mine in a separate bowl!)
. MICROWAVE on HIGH 30 seconds; stir. (I didnt stir mine!) MICROWAVE until egg is almost set, 15 to 30 seconds longer.
REMOVE tortilla with paper towel liner from bowl to flat surface. TOP egg with cheese and salsa. FOLD bottom of tortilla over egg, then fold in sides.

ReplyDeleteMy kids used to live on microwave eggwhites. They loved them and it's an excellent source of protein. I am not a huge fan of eggyolds microwaved, though. Is there a lower calorie tortilla?
ReplyDeleteI am sure there is a lower cal tortilla than this! I got these for free from Bilo so I am slowly working on using them up. These arent too bad, nutritional stats: 80 cal, 2 fat, 14 carbs, 1 fiber & 2 protein :) HTH!

I cannot wait to try this. I have to make a commissary run to get some more tortilla wraps. Ran out of them today. I bet my kids would love this too.
