Ritz Breakfast Bake

A simple and affordable meal, that can be adapted to mostly any taste, by adding extra veggies, some additional protein, and using your favorite CHEESE :) This recipe is cooked up in a 9x13 dish, but you could half the ingredients and make it in an 8x8 if that better suits your needs.

Ingredients:
36 ritz crackers (about 1 sleeve) crushed fine, I put mine in my mini food processor
12 eggs
1/2 cup milk
1 tbs onion powder
2 cups prepared white gravy (pour-able consistency, but not water thin)
1/2 cup cheese

Preheat oven to 375. Spray glass 9x13 dish with cooking spray. Spread the crushed crackers in the bottom of the dish. Drizzle the gravy as evenly as possible over the cracker crumbs. In a large mixing bowl, beat the eggs, milk and onion powder until well combined and pour this evenly over the gravy and cracker base. Top with cheese. Bake for 30-35 minutes or until puffed and cooked through. Serve and Enjoy! This would be great topped with some salsa, hot sauce, or as my hubby like it, with maple syrup :)

Roasted Tomato Basil Frittata

When I made the Roasted Tomatoes, I knew that I needed a dish to put them in, and since these egg bakes are fabulous for my hubby's breakfasts, I incorporated them in to the ingredients. The results were delicious!

Ingredients:
8 Eggs
1/4 heaping cup green onions, diced
1/2 recipe Quick & Dirty Roasted Tomatoes
1/4 shredded cheese, with 2% milk
6 slices deli lunch ham

Preheat oven to 375 and spray 9 inch glass pie pan with cooking spray. Beat together all ingredients and pour in to pan. Bake for 20-30 minutes or until cooked through. Serve and enjoy!

Ham and Spinach Frittata

Ingredients:
8 eggs
1/4 cup milk (skim)
2 oz diced peppers ( I used red, orange, and yellow sweet bell peppers )
1/2 small red onion, diced
1 cup baby spinach, wilted
1 2 oz ham slice, cubed
1/4 cup shredded cheddar cheese (2%)
1 tsp olive oil

Preheat oven to 375. Spray 9 inch glass pie dish with pan spray. Stir fry the onions and peppers together in oil, then wilt spinach in pan. Combine cooked veggies and dice until well distributed. In a large mixing bowl, beat eggs with milk, then add in veggies and ham. Pour in to prepared dish and top with shredded cheese. Bake for 30 minutes or until cooked through. Serve and enjoy!

Ham, Egg, and Cheese Biscuit Bake

I love to make sure that Ed has a good breakfast in the morning during the week WITHOUT me having to cook every single morning. These sorts of meals are great to make a head and simply reheat the portion you want when you are ready to eat it. Filling, yummy, and easy. It doesn't get much better than that!

Ingredients:
12 eggs, beaten
2 cups Jiffy All Purpose Baking Mix
2/3 cup milk
1/2 cup shredded mozzarella cheese
2 servings thin sliced deli meat, diced ( I used Land O Frost, Honey Ham)

Preheat oven to 375. Spray 9x13 dish with pan spray. Mix the milk and jiffy mix together, spread as evenly as possible on the bottom of the pan. Sprinkle with cheese. Top with ham, then pour eggs over the top. Bake for 30  minutes or until cooked through.

Egg Bake with Hashbrowns

:) On the search for yummy, filling, healthy breakfast that can be cooked ahead and reheated. It started with Salsa Egg Bake but I needed a larger serving that would be filling for both Ed and myself. And this was created. You could simplify it some for yourself by using frozen hasbrowns, but I have a 10 lb bag of potatoes that needed to be cooked (all 10 lbs are NOT in this recipe :D ) Feel free to add more veggies to your liking.

Ingredients:
12 eggs (or you could use egg beaters)
8 tablespoons hot salsa (or mild, know your preferred spice level)
1/2 cup white flour
2 tbs water
1/2 cup shredded cheese
2 slices of chicken bologna, diced (or whatever meat/ lunch meat you have on hand)
2 lbs of potatoes, peeled and shredded.
5 teaspoons vegetable oil

Preheat oven to 375.
HashBrowns First:
Preheat large skillet over medium heat. Add oil. For the hashbrowns, once the potatoes have been shredded soak them in a large bowl of cool water. Drain them through a colander and back to a bowl of fresh water until the water runs clear (this is getting out some of the starch so the potatoes don't turn gray and yucky looking.) Pat the potato shreds a bit to remove some excess water, then transfer to hot pan with oil. Stir to cook, allowing them to sit and brown some.
Spray  9x13 baking dish and pour in the cooked hash browns, spreading evenly on the bottom.
Mix together the remaining ingredients in a mixing bowl, then pour evenly over the hashbrowns.
Bake for 30-45 minutes or until knife inserted comes out clean.

YUM! :)
depending on how big you want the servings:
6 servings @ 10 PPV
8 Servings @ 8 PPV each
16 Servings @4 PPV each.

Ed and I both had this for breakfast today with some fried apples and it was sooo yummy! Ed had a 8 PPV serving size and mine was the smaller. and I am FULL :)

***Alternatively, you could cut the ingredients in half and bake in  an 8x8 dish, but I was looking for breakfast for the both of us for most of the week :)

Turkey Egg and Cheese Sandwich

To keep things light a fresh in the morning, it is important to have a few quick "go-to" easy foods!
This is one of mine. You can sub out ham, or just about any other meat on the sandwich!

Ingredients:
2 Slices light wheat bread
1 egg
1 slice cheese
1 serving turkey deli meat ( I used Oscar Mayer)
Salt and Pepper to taste

Preparation:

Put your bread in the toaster.
Spray a small (1-2 cup size) microwave safe container with pan spray. Beat egg in container, add salt and pepper. Microwave on high for about 1 minute. CONTAINER WILL BE HOT! =) Be careful when removing from the microwave. While toast is finishing, put the deli meat in the microwave for about 30 seconds. I normally will put it on a saucer plate in about the size and shape of the bread.

Once your toast is done, put the meat on the bread, top with cheese, and then turn the scrambled egg out on top of the cheese. Serve and Enjoy!

Blueberry Banana Waffle

I wanted something different for breakfast, and then I spied the pile of bananas on my counter!


Ingredients:
1 serving of Blueberry Wheat Complete Pancake Mix
1 smushed banana
1/4 cup water
Sprinkle of cinnamon


Preheat your Waffle Iron.
Mix ingredients.
Before adding to iron, be sure to spray with pan spray!!

Cook til done!



Now, I wanted an egg with it, so in a microwave safe dish
spray with pan spray and beat an egg in the bowl.




Nuke on high for about one minute


tada!


This lovely waffle is 4 Points+
The egg is 2 Points+

And it was ever so tasty!

as a side note, whenever I make waffles with fruit in them
well mushed fruit, it is hard to get them out of the iron in one piece!
Don't stress yourself, flip the iron over and drop the 
waffle on your plate.
Easy Peazy!

Turkey Bacon Egg and Cheese Breakfast Wrap

I love simply, yummy, filling things in the morning!

Ingredients:
1 flour tortilla
1 wedge Laughing Cow French Onion Cheese
1 slice Turkey bacon
1 egg




Preheat pan for cooking egg, while doing that, smear LC cheese over one whole side of the tortilla. Place turkey bacon on a paper towel and microwave for 1 minutes (for crisp bacon). Cook egg, place on 1/2 of the tortilla, top with bacon and fold in half. return to pan that egg was cooked in and cook on each side for about 10-25 seconds or until browned. Serve and Enjoy.

Ham Egg and Cheese Sandwich with Salsa

I could eat a Ham, Egg and Cheese Sandwich for any meal of the day and be a happy girl.  They are so easy to make !

Deli Flat
1 eggs
1 serving deli ham
1 slice cheese made with 2% milk
2 teaspoons salsa


Toast your deli flat. Pam fry and egg, breaking yolk. Once you flip in, put salsa on egg and top with cheese and ham ( i normally nuke the ham for a few seconds before hand!!). Once cheese is melted and egg cooked, put on your flat and enjoy :)

Egg and Cheese Breakfast Burrito

I found this recipe in the Sunday Newspaper  on 02/13/11 and recently rediscovered it in one of my paper piles. This is a super easy Microwave recipe! The article credits www.IncredibleEgg.org.


Ingredients
1 flour tortilla
1 Egg (you could use egg beaters)
1 tbspoon 2% cheese
1 tbspoon salsa

LINE 2-cup microwave-safe cereal bowl with microwave-safe paper towel.PRESS tortilla into bowl. 

BREAK egg into center of tortilla. BEAT egg gently with a fork until blended, being careful not to tear tortilla. ( I beat mine in a separate bowl!)                  
                                                                                                                                                                   MICROWAVE on HIGH 30 seconds; stir. (I didnt stir mine!) MICROWAVE until egg is almost set, 15 to 30 seconds longer.

REMOVE tortilla with paper towel liner from bowl to flat surface. TOP egg with cheese and salsa. FOLD bottom of tortilla over egg, then fold in sides.


Yummers. 5-6 PointsPlus Depending on your cheese! :)

Caesar Salad with Egg

I have about 3 dozen eggs just hanging out in the fridge so I hard boiled some this morning before work.
Hence, the salad :)

Ingredients:



about 1.5 cups romaine lettuce
1 tablespoon Kraft Classic Caesar Dressing
1 tablespoon 4C Parmesan/Romano grated cheese blend
2 tablespoons Texas Toast Croutons
1 hard boiled Egg, sliced

Combine and serve!

Eggs & Oatmeal

This simple little masterpiece is my go-to easy filling breakfast.
You could slim it down some using egg beaters, but I prefer it this way.


1 egg, pan fried in a light coating of PAM. Cooked over medium, with a piece of Kraft 2% Milk cheese Melted on top (Egg & Cheese = 3 PointsPlus)

1/4 cup quick oats, dash of cinnamon and sprinkle of sweetener of choice. (2-3 PointsPlus, depending on your sweetener) For these, I boil the water in the microwave, add it to my oats and spices until just a bit watery. then i put the oatmeal in the microwave about about 1 more minute. Makes them thick and porridge -ie. Eat with water and coffee. This holds me for about 4 hours. You can bulk it up some more if you need to with veggies or fruit, or you could save those for a mid morning snack.

It doesn't look special but it sure hits the spot! :)
