Savory Breakfast Bake

If you have been a reader for long, or if you visit my recipe index, you know that we are big fans of breakfast! This recipe is one that I came up with after Ed has a few sweet breakfasts back to back and I wanted to try something different. The blend of spices in this recipe is the perfect savory blend. If you scale the portions down this could be an awesome side dish! We had some leftover burger buns to use up, but you can use all light wheat bread if you prefer


Savory Breakfast Bake
Printable Recipe

3 burger buns, cubed
2 slices light wheat bread, cubed
1/3 cup milk
5 eggs
1/4 cup diced green onions
1/4 tsp thyme
1/8 tsp salt
1/8 tsp pepper
1/4 tsp minced onion
1/4 tsp garlic salt with parsley
1/4 cup 2% milk cheese shredded

Preheat oven to 375. Spray 9 inch pie pan with cooking spray Toss the bread cubes and spices together, beat the eggs and milk together.Combine the bread and egg mix and stir til coated Sprinkle with cheese. Bake for 25-35 minutes or until cooked through Serve and enjoy!

Ritz Breakfast Bake

A simple and affordable meal, that can be adapted to mostly any taste, by adding extra veggies, some additional protein, and using your favorite CHEESE :) This recipe is cooked up in a 9x13 dish, but you could half the ingredients and make it in an 8x8 if that better suits your needs.

Ingredients:
36 ritz crackers (about 1 sleeve) crushed fine, I put mine in my mini food processor
12 eggs
1/2 cup milk
1 tbs onion powder
2 cups prepared white gravy (pour-able consistency, but not water thin)
1/2 cup cheese

Preheat oven to 375. Spray glass 9x13 dish with cooking spray. Spread the crushed crackers in the bottom of the dish. Drizzle the gravy as evenly as possible over the cracker crumbs. In a large mixing bowl, beat the eggs, milk and onion powder until well combined and pour this evenly over the gravy and cracker base. Top with cheese. Bake for 30-35 minutes or until puffed and cooked through. Serve and Enjoy! This would be great topped with some salsa, hot sauce, or as my hubby like it, with maple syrup :)

Cinnamon Raisin French Toast Casserole

:D The name says it all!

Ingredients:
1/3 cup old fashioned rolled oats
10 sliced cinnamon raisin bread, diced
8 eggs
1/3 cup super fine apple sauce (apple sauce pureed for smoothness)
1/2 cup milk
1/4 tsp cinnamon


Preheat oven to 375. Spray 9x13 glass baking dish with pan spray. Toss bread and oats together, pour in baking dish. Mix the remaining ingredients together in a medium mixing bowl until well combined. Pour egg mix over bread and stir until evenly coated. Bake for 25-35 minutes or until cooked through.





makes 8 servings at 6 PPV each
           6 servings  at 8 PPV each
          4 servings at 12 PPV each

Salsa Egg Bake

Need a new breakfast recipe? I know I did.
This was simple, yummy and filling. And Ed liked it; SCORE!
Use Egg Beaters to slim it down if you want.


Ingredients:
6 large eggs
2.2 oz (63 g) Oscar Mayer Smoked Ham Lunch Meat
4 tbs hot salsa
1/4 cup flour
1/4 cup (28g) Colby Jack Shredded Cheese
1 tbs water

Preheat oven to 375; spray 8x8 glass pan with pan spray.
Beat eggs in a medium sized mixing bowl. Add water and salsa. Beat until well combined. Slowly mix in the flour until most lumps are gone. Pour egg mixture in to glass dish. sprinkle with ham, top with cheese.
Bake for 30-35 minutes or until golden brown and inserted knife comes out clean.
Serve and Enjoy :)




makes 4 servings @ 5 PPV
makes 6 servings @ 3 PPV

Apple Cranberry Almond Oatmeal Pancakes with Strawberry Blueberry Cream Cheese Sauce

Whether you make the sauce to go on it or not, you NEED to try these. Easy, simple, just as the other oatmeal pancake recipes I have posted. The secret ingredient is Quaker Hearty Medleys Apple Cranberry Almond Instant Oatmeal. One of the Walmart's here near town had it on clearance over the weekend, so I bought a box. Eating just as regular oatmeal: Fabulous
Eating it as a pancake: Super Fab =)

Pancake ingredients:
1 packet Apple Cranberry Almond Quaker Oatmeal
1 egg
enough water to get batter to desired consistency

Mix ingredients together and pour in to a preheated skillet that has been sprayed with pan spray. Cook 3-5 minutes on each side or until done.

While your pancake is cooking, get:
3 strawberries, rinsed, pat dry, stems removed and diced
a palm full of blueberries, rinsed, pat dry
1 oz light cream cheese

Nuke the cream cheese for about 10 second to soften, dump in the berries and mush together, leaving as chunky or as smooth as you want.



Pancake = 6 Points+
Cream Sauce = 3 Points+
or 9 Points+ for all of it.
Pretty Steep for me for breakfast but it is SO good! :)

Frozen Breakfast Wraps

Isn't it funny how things can get lost out on the world wide web?? Thank you for jogging my brain Maggie!!!
I did this post a while back and forgot about it :D'OH:

Frozen Breakfast Wraps

The recipe is easy enough and can be slimmed down some.
(weight watchers: 1 wrap=4 pp or 2 wraps=9 pp
If you made just the egg and sausage mixture and didnt wrap, just served. 1/4 cup of mix = 2 pp, 1/2 cup = 5 pp per serving )

Sweet Potato Pineapple Oatmeal

Yesterday morning I made  Pineapple Crisp for breakfast and I was pretty impressed. It got me thinking about a recipe my grandmother-in-law had made at dinner one night. It was a side dish with sweet potatoes and pineapple in it. And I just so happened to have some sweet potatoes I could repurpose.

Ingredients: makes 1 serving
1/2 cup (130g) Sweet potatoes, canned in syrup, syrup drained, then mashed.
1/2 cup pineapple tidbits, canned in own juice, juice drained
1/4 cup quick oats
about 2 tablespoons of water
1/8 teaspoon cinnamon
1 packet splenda with fiber

mix all of the ingredients together, stir to combine well. Since I noticed some of the moisture cooked out yesterday, I put a saucer over my bowl this morning before I heated it in the microwave to hold it in a bit. Heat in microwave for about 1-1.25 minutes. serve and enjoy =)

Pineapple Crisp Breakfast

At this point, I am sure you guys have figured out I LOVE me some easy, cheap fast recipes. This one is no different. It was originally posted over at and adapted from  Delightful Country Cooking as a guest post by Tina from Mom's Crazy Cooking.


Ingredients: (makes 1 serving)
1 cup chunk pineapple in its own juice, drained
1/4 cup quick oats
1 packet of splenda
sprinkle of cinnamon (about 1/8 teaspoon)
about 1 tablespoon of water

Mix ingredients in a microwave safe bowl and heat for 1 minute. Serve and Enjoy.

Note: if you don't like pineapple, you probably won't like this :)

Turkey Bacon Egg and Cheese Breakfast Wrap

I love simply, yummy, filling things in the morning!

Ingredients:
1 flour tortilla
1 wedge Laughing Cow French Onion Cheese
1 slice Turkey bacon
1 egg




Preheat pan for cooking egg, while doing that, smear LC cheese over one whole side of the tortilla. Place turkey bacon on a paper towel and microwave for 1 minutes (for crisp bacon). Cook egg, place on 1/2 of the tortilla, top with bacon and fold in half. return to pan that egg was cooked in and cook on each side for about 10-25 seconds or until browned. Serve and Enjoy.

Egg and Cheese Breakfast Burrito

I found this recipe in the Sunday Newspaper  on 02/13/11 and recently rediscovered it in one of my paper piles. This is a super easy Microwave recipe! The article credits www.IncredibleEgg.org.


Ingredients
1 flour tortilla
1 Egg (you could use egg beaters)
1 tbspoon 2% cheese
1 tbspoon salsa

LINE 2-cup microwave-safe cereal bowl with microwave-safe paper towel.PRESS tortilla into bowl. 

BREAK egg into center of tortilla. BEAT egg gently with a fork until blended, being careful not to tear tortilla. ( I beat mine in a separate bowl!)                  
                                                                                                                                                                   MICROWAVE on HIGH 30 seconds; stir. (I didnt stir mine!) MICROWAVE until egg is almost set, 15 to 30 seconds longer.

REMOVE tortilla with paper towel liner from bowl to flat surface. TOP egg with cheese and salsa. FOLD bottom of tortilla over egg, then fold in sides.


Yummers. 5-6 PointsPlus Depending on your cheese! :)

Apple Cinnamon Oatmeal

A quick-ish easy combination of two super yummy things!
I Followed the directions for the Crustless Apple Pie, but I diced the apples,
and drizzled them with about 2 teaspoons of water before nuking them



Make the oatmeal:
1/4 cup quick oats, dash of cinnamon and sprinkle of sweetener of choice. (2-3 PointsPlus, depending on your sweetener) For these, I boil the water in the microwave, add it to my oats and spices until just a bit watery. then i put the oatmeal in the microwave about about 1 more minute. Makes them thick and porridge -ie.

Then Top with the Apples!


Total PointPlus: 3-4 depending on sweetener used!

Eggs & Oatmeal

This simple little masterpiece is my go-to easy filling breakfast.
You could slim it down some using egg beaters, but I prefer it this way.


1 egg, pan fried in a light coating of PAM. Cooked over medium, with a piece of Kraft 2% Milk cheese Melted on top (Egg & Cheese = 3 PointsPlus)

1/4 cup quick oats, dash of cinnamon and sprinkle of sweetener of choice. (2-3 PointsPlus, depending on your sweetener) For these, I boil the water in the microwave, add it to my oats and spices until just a bit watery. then i put the oatmeal in the microwave about about 1 more minute. Makes them thick and porridge -ie. Eat with water and coffee. This holds me for about 4 hours. You can bulk it up some more if you need to with veggies or fruit, or you could save those for a mid morning snack.

It doesn't look special but it sure hits the spot! :)

Sweet Potato Waffle Recipe

YUM!

I didnt take any pics, but I will be making this again soon!
For those on Weight Watchers, this comes out to be right at 6 PointsPlus, using the mix I used! (if you use another mix, make sure you double check your calculations!)


So we take (for one largeish belgian waffle) :

---74 grams (or about 1/4 cup) "complete" pancake/waffle mix.
I used the 7 Grain Tendabake
---1/4 cup mashed sweet potatoes ( i baked 4 large yesterday and scooped the insides out and refrigerated (didnt add anything to them), and just measured out some)
---sprinkle of cinnamon and allspice (depending on how you like your sweet potatoes!)
---a few drops of vanilla extract
---about 1/4 cup water (til desired consistency is reached)


Preheat waffle iron. Mix together above ingredients, pour in to hot iron. I pulled mine out when it said it was done but it fell apart, so next time I will let it cook for another 30 seconds or so 

Top with a light serving of sugarfree syrup!

YUMMY!
