Banana Cinnamon French Toast

My facebook buddies know how to get my attention! :) I saw this posted on a friends page and I knew immediately that I wanted to make it. Jen said something about it sticking...and I figured, well lets just make it on the griddle, so that is what I did. Now don't flip out when you see some of the amounts! This is intended to be a make now, freeze and eat later sort of thing. Or I guess you could have a party!

30 slices light wheat bread
1 small carton egg beaters egg whites (10 serving container)
1 1/3 cup milk ( I used 2/3 cup coconut milk and 2/3 cup skim)
1/3 cup sugar (yes regular WHITE sugar! :) )
1 tablespoon ground cinnamon
1/2 tablespoon almond extract
1tablespoon vanilla extract
3/4 cup smushed bananas 

Mix all of the ingredients together, minus the sliced bread, stir until well combined.

Preheat griddle to medium heat. Spray griddle with cooking spray. Dip bread slices, once at a time in the mix and place on griddle (my griddle fit 6 pieces of bread per batch). Be sure to stir the coating between batches as the banana will settle!


Cook for about 2-4 minutes on each side? ( I didnt time it...but cook it  like you normally would french toast?) Repeat until all bread is dipped and cooked.




Serve immediately or place on cooling racks to cool if you plan on freezing any. 
For Freezing, cool completely and then place on a baking sheet in the freezer. Once frozen place in freezer storage bags. To reheat: cook for about 30-45 seconds in the microwave.

Creme'y Chicken Enchiladas

This makes 5 Enchiladas

Ingredients:
.8 lbs boneless skinless chicken breast
or you can use canned chicken or whatever chicken you want!
1 can of chicken broth
2/3 container Philly Cooking Creme Santa Fe Blend (2/3 cup)
1 cup diced tomatoes ( I used canned, in italian spices. drained)
1/2 cup Sargento Reduced Fat Extra Sharp Cheddar Shredded Cheese
5x flour tortillas
Crushed Red peppers
Cumin
Onion Powder

Now, depending on how you want to make this...you can do it a few ways. I decided I wanted to shred my own chicken, so  I put the chicken in the crock pot with 1 can of chicken broth, (spices optional, i sprinkled in come cumin and onion powder) and cooked until it easily shredded when stirred (about 4 hours on low...and my chicken was frozen) or you can use canned or whatever. Just make sure that after you get your chicken, you drain the extra juice off of it.

Preheat your over to 375.
In a pan sprayed with pan spray, preheated over medium heat on your stove top, mix the shredded chicken with 1/3 cup of the cooking creme. Stir until well combined. Add in the tomatoes and cook until hot.
Spray a 9x13 baking dish with pan spray. distribute the chicken mixture evenly over the 5 tortillas and roll. place seam side down, side by side in the pan. Brush or spread the other 1/3 cup cooking creme over the tops of the enchiladas and the sprinkle with cheese. Sprinkle with crushed red pepper flakes

bake in over for about 7-10 minutes or until cheese is melted.

or the whole tray, which I don't suggest!! is 29 PPV, so however you split it....yeah. just do it.

this was actually pretty good. Ed was disappointed they didnt have any "red sauce" on them, so maybe I will work on that next. That would slim it down some!

As with every other recipe, you can bulk it up some with some other veggies if you want! :) Onions and peppers would be good if you like those, or maybe some mushrooms

Cinnamon Banana Oatmeal with Coconut Milk

In my ventures to try the untried (plus I had a coupon making it pretty cheap!) I bought some coconut milk.

Ed and I both tried it last night just straight from carton to cup, and it is pretty bland with an after taste of coconut. He put it in his coffee this morning and liked it, though he did realize that dairy milk has alot more sugar in it than this coconut milk, so he added an extra sweet n low.


Ingredients:
1 cup coconut milk ( 1PPV )
1/2 cup quick oats ( 4 PPV )
1/4 teaspoon cinnamon
1 banana, mushed

This could be microwaved but Ed was cooking something in there, so I made my on the stovetop.

Put milk in pan, heat. Add cinnamon, stir until well combined. Add banana, stir until well combined. Continue to heat until milk begins to boil. Add oats and cook, stirring frequently, until desired consistency is reached.

Used the measurements above made for a medium consistency oatmeal, so depending on how you like yours, adjust the milk amount.

Tilapia with Old Bay Seasoning, Corn Bread and Green Beans!


Holy Yum :)
Easy and very few ingredients!
For the Cornbread, I used Martha White Sweet Yellow Cornbread mix.
Add 1 egg, beaten and 1/2 cup of milk, then follow directions on pouch. 1/6 of tray is 4 PointsPlus.
For the Greenbeans: open a can, drain liquid, add some garlic seasoning, cook as desired. 0 Points Plus! :)

Now the Tilapia, dear sweet tilapia :)
3- 4oz tilapia fillets
2 teaspoons olive oil
1 teaspoon Old Bay Seasoning
1/8 teaspoon black pepper.

Preheat skillet over medium heat
Mix dry spices. Brush flat side of fish lightly with oil, sprinkle with dry spices.
Once pan is hot, spray with pan spray and add fish, flat side down.
brush the remaining oil over the fish and sprinkle with spices (you may have some left over)
Cook on each side for about 3-4 minutes or until cooked through.

3 Points Plus per 4oz serving.

Turkey Bacon Egg and Cheese Breakfast Wrap

I love simply, yummy, filling things in the morning!

Ingredients:
1 flour tortilla
1 wedge Laughing Cow French Onion Cheese
1 slice Turkey bacon
1 egg




Preheat pan for cooking egg, while doing that, smear LC cheese over one whole side of the tortilla. Place turkey bacon on a paper towel and microwave for 1 minutes (for crisp bacon). Cook egg, place on 1/2 of the tortilla, top with bacon and fold in half. return to pan that egg was cooked in and cook on each side for about 10-25 seconds or until browned. Serve and Enjoy.

Blueberry Banana Mini Pie

This dandy recipe make 2 One serving little pies.

you need:

1 small container voskos greek blueberry yogurt
1 banana (1 half mushed, 1 half sliced in thin slices)
2 lowfat graham crackers, crumbled (keep separate)
2 small containers


 put 1 crumbled graham cracker in the bottom of each container.
in a separate bowl, combine the yogurt, 1/2 mushed banana . stir until well combined.
dump and spread 1/2 of mixture of top of "crust" in each container.
top each with the thin sliced bananas.
 you serve right away if you prefer a crisper crust. I made my before work and refrigerated them.

Baked Cabbage

One of my online Buddies, Amber, Shared this with me when I asked how people make their cabbage. The recipe looked tasty but I wanted to slim it down some. The results were yummy. Ed and I both really liked it!

Original recipe credit with great step by step found here: Newly Weds Blog (now if you are flipping back and forth between here and there, don't mix up the ingredients :) it is sure to change the PointPlus value!

Baked Cabbage 8 servings
1 head of cabbage, shredded (mine was about 1.5 lbs)
1 large sliced onion ( i used the dehydrated onion flakes)
3 tablespoons cornstarch
2 cups 1% milk
splash of hot sauce
7 slices raw turkey bacon, crumbled
dash of salt and pepper

Preheat oven to 350. In a 9x13 baking dish that has been sprayed with Pam, dump in onion and shredded cabbage. In a separate dish/bowl, mix cornstarch, salt, pepper. Once combined and milk and hot sauce, wisk together. pour evenly over cabbage. cover with foil and bake for about 1.5 hours, remove the foil for the last 10-15 minutes so the bacon can get crisp.


My only suggestion would be stir it before you serve it, to make sure the salt and pepper distribute evenly.
But other than that a very nice side for just 1 pointsplus per serving!

**recipe side note** great served as leftovers! just reheat in microwave!

From the Box: Pepperoni Pizza Lunchables

I love these things. 3 mini pizzas. 8 PointsPlus total. 'Nuff said!!!



Ham Egg and Cheese Sandwich with Salsa

I could eat a Ham, Egg and Cheese Sandwich for any meal of the day and be a happy girl.  They are so easy to make !

Deli Flat
1 eggs
1 serving deli ham
1 slice cheese made with 2% milk
2 teaspoons salsa


Toast your deli flat. Pam fry and egg, breaking yolk. Once you flip in, put salsa on egg and top with cheese and ham ( i normally nuke the ham for a few seconds before hand!!). Once cheese is melted and egg cooked, put on your flat and enjoy :)

Banana Pudding Pie

This dandy recipe make 2 One serving little pies.

you need:

1 banana (1 half mushed, 1 half sliced in thin slices)
3 tablespoons PB2
2 lowfat graham crackers, crumbled (keep separate)
2 small containers


 put 1 crumbled graham cracker in the bottom of each container.
in a separate bowl, combine the yogurt, 1/2 mushed banana and PB2. stir until well combined.
dump and spread 1/2 of mixture of top of "crust" in each container.
top each with the thin sliced bananas.
 you serve right away if you prefer a crisper crust. I made my before work and refrigerated them.

So Good :)

Spicy Crunchy ChickPeas

Spicy Crunchy ChickPeas From January 2011 All You Magazine

1 tablespoon Olive Oil
½ teaspoon Cinnamon
½ teaspoon Cumin
½ teaspoon Allspice
½ teaspoon Salt
¼ teaspoon Pepper
1 15oz can Chickpeas (Garbanzo Beans) Draned, rinsed and patted dry



Preheat oven to 400. Line a rimmed baking sheet with foil. Combine all above ingredients except the Chickpeas in a large bowl. Once well combined, add chickpeas and toss to coat evenly. Dump the chickpeas onto the baking sheet and roast, stirring and shaking the baking sheet often, until crunchy and browned (about 35-50 minutes). Transfer to a bowl or dish to cool, stirring occasionally before serving.



Makes 4- ¼ cup servings @ 4 PointsPlus each

PB2 Fluff with (insert fruit of choice here!)

I hear so many great food combos from so many great people it is hard to keep up with! I THINK this is from Annette & Sheri

1 container of Greek Yogurt ( I used Voskos Honey Vanilla Bean 5.3 oz)
3 tablespoons dry PB2 (experiment til you get the flavor/consistency you want!)
**Next time I make this, I think I will only use 2 tablespoons!***
1 serving of your favorite fruit (strawberry, apple, banana, etc)


Dump yogurt in a bowl and add pb2 ( I suggest doing it about 1 tablespoon at a time for best mixing)

StirStirStir. Slice fruit and serve as a dip or mix together.

Strawberry PeanutBanana Butter Melt

 :) I should have NEVER doubted Amy's Grilled PB&J :)

You take a Deli Flat @ 3PP
1 tablespoon PB (mine is 3 PP)
1/2 banana
2 strawberries

Mush your banana to make a "banana butter" :)
Put on one half of the Flat, Put PB on other half
slice your strawberries thin and add those on!


Put together and heat in the microwave for about 30 seconds.
