Cappuccino Fluff (and frozen mini pies!)

When I saw this recipe posted over on A Better Baker, I KNEW I had to try it. Oh so easy and Oh so yummy!


Ingredients:
1 tub (about 2 cups) cool whip light thawed
2 cups milk ( I used almond breeze ) and I think next time I make it I will only use 1 1/2 cups!
1 4 serving size box of sugar free/fat free white chocolate pudding mix
3 teaspoons instant coffee granules
Sprinkle of Cinnamon


Pour Milk and instant coffee in to a medium bowl. Add the dry pudding mix and whisk til well combined. Fold in the whipped topping and chill for at least an hour before serving. Sprinkle with cinnamon.

Now this was DELISH but it was kind of looser in consistency than I thought it needed to be, (hence, next time using less milk) so I put it in some mini pie shells and froze it. They mini pies were good, but I suggest serving before they freeze solid.

1/6th of the recipe is 3 Points+ before the mini pie shell. If you make mini pies, there is enough filling to make  at least 12 mini pies.

1 mini pie = 5 Points+

  2. Did you use different flavor coffee granules? (I was asking cause in the picture with the coffee packets, they are different colors - I wasn't really sure if instant coffee granules come that way.) These look really good, and more along the lines of what size I would want a dessert to be. Plus, they just look super cute.

  3. Great question Beth. There was one with a different flavor but two of the sticks measured enough so I didn't use it. I think the other two were dark roast and gourmet? But i bet flavored ones would be a GREAT way to mix it up! :) I am excited to try this again using less milk, so maybe I will try flavors next time!
