Strawberry Banana French Toast Casserole

Ingredients:
6 slices light wheat bread (45 cal per slice), cubed
1 banana, mushed
6 oz strawberries, diced
1/2 cup milk
4 eggs
1/2 tbs cinnamon
1 tbs vanilla extract

Preheat oven to 375. Spray an 8x8 baking dish with pan spray. Place cubed bread in dish.
Mix the mushed banana, milk, eggs, and spices until all well combined.
Pour the milk mix over the bread and mix til all bread is well coated.
Bake for 20-30 minutes or until cooked through.

YUM!
I have made a few newer variations of this and have taken it to work to let co-workers try it. I was told that it has a "bread pudding-ish" consistency, so I am working on new recipes to add some oats to absord some moisture. I do believe you can bake it for a bit longer and that will help as well. Everyone that tried it, liked it :)

Honey Mustard Pretzel Chicken Tenders

Ever see a recipe that just gets your brain going and saliva flowing :) ?? Yep, that was this one. I first saw it on Pinterest. Katie over at Dashing Dish has out done herself with the beautiful simplicity of this recipe!

Ingredients:
1 lb chicken, cut in strips ( cut mine in to 8)
3 tbs honey
2 tbs mustard
3 servings (about 48) pretzels, crushed (your amount may need to be varied here)



Preheat oven to 425. Line baking sheet with foil and spray with cooking spray. In a mixing bowl, combine honey and mustard. Coat chicken in honey mustard, then in pretzel. Bake for 10 minutes, then flip and continue baking for another 5 minutes or until cooked through.


This was SO SO good. Ed and I both loved it!

Strawberry Banana Baked Oatmeal

Oh Gina! :) Your website always has a way of enticing me to try something different! Gina at Skinny Taste, always serves up great recipes. Here is my variation of her recipe, originally found here

Ingredients:
2 medium bananas, sliced in thin rounds
11 oz (or more:D) strawberries, sliced
1 1/2 cups old fashioned oats
3/4 tsp baking powder
1tsp cinnamon
1 1/2 cup milk
1 egg
1/8 cup + 1 tbs honey
1/2 tsp almond extract
1 tsp vanilla extract
Pinch of salt

Preheat oven to 375.
Spray an 8x8 (or whatever smallish size) baking dish with pan spray. Layer  at least 1/2 of the banana slices on the bottom of the pan, topped with at least 1/2 of the strawberries. Drizzle with 1 tbs honey and 1/4 tsp cinnamon. Cover with foil and bake for 10-15 minutes, or until bananas are soft.

While baking the fruit, in a medium bowl, mix the oats, baking powder, remaining cinnamon, salt. Stir well.
In a separate bowl, combine the milk, honey, egg and extracts.

Remove the fruit from the oven, then pour the oat mixture evenly over it. Pour the milk mixture over the oats as evenly as possible. Top with the remaining strawberries and bananas.

Bake for about 30 minutes or until top is golden brown. Serve hot from the oven, or reheated the next day!

Chocolate Cherry Oatmeal

I LOVE dried cherries, so I incorporated them in my breakfast this morning.

Ingredients:
3/4 cup water
1/3 cup old fashioned oats
1 splenda packet
a few drips of almond extract
small sprinkle of allspice
20g (1/8 cup) dried cherries, cut in half
7g mini semisweet morsels


Bring water and spices to a boil. Add oats and cherries. Cook til done. Top with chocolate chips.
YUM!

Tomato Basil Turkey Burgers

We had a coupon from some free Boca burgers a while back. Ed tried them and liked them, so this is our MEAT version of their tomato basil burger.
Recipe adapted from Food.com

2 lbs ground turkey 91/9 Butterball
1/3 cup Italian bread crumbs
1 1/2 tsp garlic salt and pepper
1 tsp dried basil
1/2 tsp onion powder
2/3 cup Italian Diced tomatoes, drained well and diced finely
2 tsp light BBQ sauce (original recipe calls for brushing on the cooking burgers, but I didn't read that well and mixed it in with the meat mix)

Preheat grill or oven broiler. (If cooking in oven, make sure you have some place for the juices to go, other than the bottom of your stove!) Combine all above ingredients. Form Patties (we made 9) Grill or broil for 6-8 minutes on each side or until cooked through.

I didn't eat any of these, but Ed said they were good. YAY :D

Sweet Potato Soup

Sweet.Potato.Soup.
uhhuh!

It looks like baby food but tastes sooooooooo good, and it freezes well!
Original Recipe Credit goes to Sing for Your Supper

Ingredients:
3 lbs sweet potatoes, peeled and roughly chopped in to chunks
3 cups chicken broth
2.5 cups water
2 tablespoon reduced fat butter
1/2 cup brown sugar
splash lemon juice
1/8 tsp cayenne pepper
salt and pepper to taste


In a large pot, bring the sweet potatoes, chicken broth and water to a boil. Cook for about 20-30 minutes until the potatoes are very soft. Using an immersion blender (or regular blender in 2-3 batches) puree the soup until smooth and no lumps remain. Add the remaining ingredients and simmer for at least 10-15 minutes. Sprinkle with some cinnamon (this MADE it for me!)

Makes:
6 servings @ 7 PPV each
7 servings @ 6 PPV each
8 servings @ 5 PPV each

Jerk Chicken Breast Tenderloins with Pineapple

Good Morning and Happy 2012!

Ingredients:
1.5 lb chicken breast tenderloin
1 tsp powdered jerk seasoning
8 pineapple rings (mine were canned in their own juice, juice drained off)
3 tsp pineapple juice
4 tsp bbq sauce


Mix bbq sauce and pineapple juice until well combined. Pour over chicken and marinate for at least 1 hour.
Preheat oven to 375. Spray baking pan with spray  and lay chicken out in a single layer. Top with pineapple and sprinkle with dried onions (optional) Bake for 20-30 minutes or until cooked through.

Serves 6 @ 4 PPV each
Serves 4 @ 6 PPV each

This was good :) I didn't marinate my chicken though, I brushed it with the sauce. I think allowing it to rest in the sauce would have given it a deeper flavor
