Strawberry Rhubarb Oatcake

I have been eyeing rhubarb for a while, and every time I see a recipe I like, the rhubarb is not in season. BUMMER! This year, I was keeping an eye out for some that wasn't ridiculously expensive and when I found some, I scooped it up. It took me about a week to find just the right recipe but it was totally worth the wait! Get Healthy With Heather is a fellow Secret Recipe Club Member and her recipe is fantastic! I made some adjustments but the original premise is based off of her recipe. This is PERFECT for breakfast, or you can have smaller portions as a snack or a dessert.

Strawberry Rhubarb Oatcake
Printable Recipe
Ingredients:
3 cup old fashioned oats
1/2 cup white flour
1 tbs cinnamon
1/4 tsp salt
2 tsp baking powder
1 tbs brown sugar blend
2 eggs
1/2 cup mashed banana
6 oz fat free vanilla yogurt
2 tbs oil
1 tsp vanilla
1 cup milk
 9 oz rhubarb, diced (about 2.5 cups)
10.5 oz strawberries, diced (about 2 cups)
1 tbs sugar

Preheat oven to 350. Spray 9x13 glass baking dish with pan spray. Dice and rinse rhubarb and strawberries, sprinkle with 1 tbs sugar, stir to coat and set aside.  Mix your dry ingredients (oats, flour, cinnamon, salt, baking powder, and brown sugar blend) in a mixing bowl until well combined. In a separate mixing bowl, combine the wet ingredients ( eggs, banana, yogurt, oil, vanilla and milk). Mix the wet ingredients with the dry ingredients and add the strawberries and rhubarb. Stir until coated and well combined Pour in to baking dish and bake for 45-60 minutes or until cooked through. Serve and enjoy!!

Peanut Butter and Strawberry Baked Oatmeal

If you check out my recipe index (which is a HOT mess right now, but working on that!) you will easily discover that I love oatmeal and peanut butter and strawberries! So when my good buddy Amber posted her recipe for Peanut Butter Baked Oatmeal, it only seemed natural to recreate it and add in come strawberries. The results or delicious. Want to know what this tastes like? A peanut butter oatmeal cookie with strawberries! Great for breakfast or a nice treat! Thank you Amber for sharing your awesome recipe!

Ingredients:
3/4 cup old fashioned oats
1 tbs brown sugar blend
1/2 tsp baking powder
1/8 tsp salt
3/4 tsp vanilla extract
3/4 cup milk
1 egg
1/4 cup creamy peanut butter
3 oz strawberries, diced and rinsed

Preheat oven to 350 and spray 8x8 pan with cooking spray. Mix together all ingredients in a large bowl and stir well. Spread in pan and bake for 20-30 minutes or until cooked through.

Serve and enjoy!

Strawberry Puffie

I love when a food idea turns out better than you imagined :)


Ingredients:

2 crescent roll triangles (normally a tube of dough comes with 8, you can use all 8 but I didn't want to eat it all!)
2-3 strawberries, diced
cinnamon and sugar, for sprinkling

Preheat oven to 375.
Press the seams of the two dough rolls together to form a rectangle. Cut in half to form two squares. Put the strawberries in the middle of the dough and roll up the sides around the strawberries, make sure there are minimal openings. Sprinkle with cinnamon sugar. Bake for about 10 minutes or until golden brown.

Enjoy :)
Makes two servings at 4 Points+ each. If you used the reduced fat crescents, that might bring the PPV down some :)

Strawberry Banana French Toast Casserole

Ingredients:
6 slices light wheat bread (45 cal per slice), cubed
1 banana, mushed
6 oz strawberries, diced
1/2 cup milk
4 eggs
1/2 tbs cinnamon
1 tbs vanilla extract

Preheat oven to 375. Spray an 8x8 baking dish with pan spray. Place cubed bread in dish.
Mix the mushed banana, milk, eggs, and spices until all well combined.
Pour the milk mix over the bread and mix til all bread is well coated.
Bake for 20-30 minutes or until cooked through.

YUM!
I have made a few newer variations of this and have taken it to work to let co-workers try it. I was told that it has a "bread pudding-ish" consistency, so I am working on new recipes to add some oats to absord some moisture. I do believe you can bake it for a bit longer and that will help as well. Everyone that tried it, liked it :)

Strawberry Banana Baked Oatmeal

Oh Gina! :) Your website always has a way of enticing me to try something different! Gina at Skinny Taste, always serves up great recipes. Here is my variation of her recipe, originally found here

Ingredients:
2 medium bananas, sliced in thin rounds
11 oz (or more:D) strawberries, sliced
1 1/2 cups old fashioned oats
3/4 tsp baking powder
1tsp cinnamon
1 1/2 cup milk
1 egg
1/8 cup + 1 tbs honey
1/2 tsp almond extract
1 tsp vanilla extract
Pinch of salt

Preheat oven to 375.
Spray an 8x8 (or whatever smallish size) baking dish with pan spray. Layer  at least 1/2 of the banana slices on the bottom of the pan, topped with at least 1/2 of the strawberries. Drizzle with 1 tbs honey and 1/4 tsp cinnamon. Cover with foil and bake for 10-15 minutes, or until bananas are soft.

While baking the fruit, in a medium bowl, mix the oats, baking powder, remaining cinnamon, salt. Stir well.
In a separate bowl, combine the milk, honey, egg and extracts.

Remove the fruit from the oven, then pour the oat mixture evenly over it. Pour the milk mixture over the oats as evenly as possible. Top with the remaining strawberries and bananas.

Bake for about 30 minutes or until top is golden brown. Serve hot from the oven, or reheated the next day!

Cream of Wheat Pancake with Strawberry Blueberry Sauce

<3 'Nuff said!

Ingredients:
1 Cream of Wheat Pancake
Palmful Fresh Blueberries
3-4 fresh strawberries, stems removed, diced
1 packet sweetner
sprinkle of cinnamon

Rinse berries together in collander. Sprinkle with sweetner ( I used Splenda with fiber) and cinnamon. Let sit for about 5 minutes. Put Berries in a cup and mash with a wire wisk. You can use a blender or a food processor, but I like the chunks in my sauce, plus I dislike washing the blender if not necessary! Mush to desired consistency, and top pancake with sauce. Serve and Enjoy

Apple Cranberry Almond Oatmeal Pancakes with Strawberry Blueberry Cream Cheese Sauce

Whether you make the sauce to go on it or not, you NEED to try these. Easy, simple, just as the other oatmeal pancake recipes I have posted. The secret ingredient is Quaker Hearty Medleys Apple Cranberry Almond Instant Oatmeal. One of the Walmart's here near town had it on clearance over the weekend, so I bought a box. Eating just as regular oatmeal: Fabulous
Eating it as a pancake: Super Fab =)

Pancake ingredients:
1 packet Apple Cranberry Almond Quaker Oatmeal
1 egg
enough water to get batter to desired consistency

Mix ingredients together and pour in to a preheated skillet that has been sprayed with pan spray. Cook 3-5 minutes on each side or until done.

While your pancake is cooking, get:
3 strawberries, rinsed, pat dry, stems removed and diced
a palm full of blueberries, rinsed, pat dry
1 oz light cream cheese

Nuke the cream cheese for about 10 second to soften, dump in the berries and mush together, leaving as chunky or as smooth as you want.



Pancake = 6 Points+
Cream Sauce = 3 Points+
or 9 Points+ for all of it.
Pretty Steep for me for breakfast but it is SO good! :)

Single Serving Strawberry Shortcakes

On the topic of Nilla Wafers, I threw this together earlier and it was AWESOME. Just make sure you have really good fresh strawberries. Me thinks this would be fab with blueberries or bananas as well!

Ingredients:
4 Reduced fat Nilla Wafers
2 large strawberries, stems removed and halved
9 grams (1 serving) cool whip free

Divide the cool whip between the Wafers, top with strawberry and enjoy.
Easy and Delish!


2 Points+ for all 4, or if you want to share, you can have 2 for 1!

Watermelon Fruit Boat

There are ideas all over the internet for how to do this. The original idea was from something my sister in law did for the 4th of July, then there were ideas of sprucing it up a bit. Easy enough and you can fill it with whatever fruit you want and fancy it up however you want.

We used:
1 largeish seedless watermelon
2 lbs strawberries, stems removed and hulled if centers white, sliced

Start by figuring out how you want to shape your melon. We were having this at a babyshower, so i did a basic bassinet shape. You can either cut it straight, or if you are lucky like I was with Lorin's melon baller, you will have a "v" shaped end you can notch the front out of. I didnt really get super great step by steps, but if you google it, you will find tons out there.

So you notch out the section to be removed and gently pull to separate. Use melon baller to remove all the yummy insides of the watermelon and place in a separate bowl. Toss the melon and berries together to mix, then refill melon. Chill til ready to serve.

Enjoy!

Strawberry Orange Vanilla Oatmeal Pancakes

Just another fun, flavorful twist on Oatmeal Pancakes!
(taste inspired by Strawberry Vanilla Pancakes)



Ingredients:
1/3 cup quick oats
1 egg
49 g diced, rinsed strawberries
a few drops of vanilla and orange extract
sprinkle of cinnamon, packet of Splenda
a few drops of water

Prepare your Strawberries. Mix in the splenda, extracts and cinnamon and let sit for a few minutes.
Mush them up with something ( i used a wire wish that fit in the cup I was using). Add the strawberry mixture to the oats and egg. Mix til well combined. 

Pour in to a preheated pan that has been sprayed with pam and cook til done. Serve and enjoy!
No Syrup needed, but you can add it if you want!

Strawberry Banana Brownie Bread Cake

We had some friends coming over for dinner the other night and wanted to try something new for them. I had been looking for recipes that use frozen bananas, but most of them mentioned thawing and ending up with a mystery liquid and brown bananas...not so tasty sounding, so I made this! This was pretty good! I made some PB2 Whipped topping ( 2 tablespoons PB2 and about 1 cup of cool whip free) to go on it and Hubby said he liked it much better with that on top. We ate some and I froze the rest!

Ingredients:
1 box pillsbury banana bread mix
1 box duncan hines snack size brownie mix
3/4 cup water, divided in to 4ths
13 oz strawberries, stems removed, diced and rinsed
180 g or 6.3 oz frozen bananas
2 teaspoons vanilla
1 teaspoon cinnamon

Preheat oven to 365.

Combine boxes of dry ingredients and stir til mixes are interspersed ( I used a wisk)

Put the frozen banana with 1/4 cup water in food processor, puree til smoothish
then add another 1/4 cup water, puree til combined.
puree strawberries in food processor til smooth.

Mix all ingredients in to a large mixing bowl, including the final
1/4 cup water. Spread evenly in a 9x13  baking dish, that has
been sprayed with pan spray.
Bake for about 40 minutes or until cooked through. Enjoy!

Fancied Up Strawberry Lemonade

This recipe is an exact replica of the Strawberry Limeade, just replace the lime juice with lemon juice!

And you could leave the strawberries out and just have plain lemonade or limeade. Nomnom!

Strawberry Cream Cheese

At the grocery store, they used to sell (and maybe still do?) flavored cream cheese. On that note, this is SO much better than that!!

1 oz 1/3 less fat philly cream cheese
1 oz diced destemmed strawberries
1 packet splenda

pulse in food processor until smooth. Enjoy!




2 Point+ for the cream cheese, spread on a low point+ piece of bread for a yummlicous snack =)


Fancied Up Strawberry Limeade

So I opened the fridge and saw a lonely little half a lime and quite a few strawberries...next thing you know I am running around the kitchen trying to find my martini shaker. I am sure I took this up a few level higher than it needed to be but no regrets over here =)

Ingredients:
1/8 cup fresh lime juice
3 oz strawberries, stems removed rinsed and mushed up, as smooth as you can get it!
1 packet splenda
1/2 cup diet beverage of choice ( I used Propel Zero Lemon Flavored)
a few ice cubes

Make this as easy or as difficult as you want.

I  mixed the splenda with the strawberries and let it sit while I did the rest.
Put the lime juice, ice and beverage in martini shaker, let it sit for a moment, then SHAKE SHAKE SHAKE :)

Pour in to the glass, add strawberries and stir slightly.

Now I could have put it all in the shaker but I could bear the thought of losing any of my loverly strawberry chunks!
