Peanut Butter Banana Smoothie

I saw this recipe over at This Chick Cooks and KNEW I had to try it! It is easy enough to make and very tasty. I think I will try making it with PB2 Next time and maybe add in some cocoa powder!



1/8 cup (10g) oats
1/8 cup (26g) Peanut Butter (just less than 2 tablespoons)
2/3 cup milk ( I used almond breeze)
1 frozen banana

Put Oats in blender and process til powdery. Add the rest of the ingredients and blend til smooth. Serve and Enjoy!

1 serving at 6 Points+ as prepared above.

Blueberry Banana Breakfast Oat Bread (In the Microwave)

I have frozen bananas, LOT AND LOTS of frozen bananas! I have baked with them before, but really wanted to try them in my Oatmeal Pancakes. So here is what happened. And the result is FABULOUS!

You start with blending up:

Blueberry Banana Ice cream for One

Or: 
45g (or Palm full) of fresh blueberries, stems removed and rinsed
1/2 frozen banana
(you may need some water or milk, but mine didn't!)
Put them in the food processor and give it a whirl.

2/3 cup oats
1 egg
( I did not add these this time, but I will next time)
Cinnamon
a few drips of vanilla

( I PROMISE I was going to make some Pancake but the batter looked to loose and I didn't want to go adding a bunch of other things)

Mix the above ingredients in a microwave safe dish ( you can spray with pam if you want, I didn't and it turned out just fine!)
Heat on high, starting with 1 minutes, then adding 30 second increments, checking the consistency of your bread. It took mine a total of 3 minutes and 30 seconds but I would not recommend heating for the entire time at once. I can just envision the explode-y things in your microwave.
CAREFULLY remove the bowl from the microwave and let it sit for a minute so you don't burn your fingers. Flip out on to a plate and serve!



If you wanted to eat the whole thing, One serving is 7 Points+
Or you could half it at 4 Points+ for each half. 
I sprayed a tad bit of spray butter and 1/2 oz light cream cheese to mine (not included in the PPV information)

Blueberry Vanilla Oatmeal Pancakes

I am in love with  Oatmeal Pancakes!

Ingredients:
1/3 cup quick oats
70g fresh blueberries, rinsed1/4 teaspoon cinnamon
1/4 teaspoon vanilla
1 egg
enough water to get desired batter consistency
1 packet of splenda


Mix the blueberries, splenda, cinnamon and vanilla together, and then smush the berries. (by hand, blender, food processor) Let that sit for about 5 minutes (or longer if you are like me and forgot about it!)

Mix this with the oats, and eggs, add water if needed. Cook in a preheated skillet, sprayed with PAM.

Serve and Enjoy!

4 Points+. I topped mine with light cream cheese bringing it to 7 Points+!

Oatmeal Pancakes with Strawberry Peach Sauce

I am always looking for fun different ways to incorporate more fruits and veggies in to my day to day lifestyle. I have recently become infatuated with Oatmeal Pancakes, so what a better way than finding ways to jazz them up some! For today's version, I used the French Toast Oatmeal Pancake recipe.

Textur-iffic!


1 small peach, pit and skin removed, diced
2-3 strawberries (depending on the size) destemmed and hulled if the centers are white, rinsed and diced
1 teaspoon of water (more may be needed)
1-2 packets of splenda depending on how sweet you want it
a few drips of vanilla


Prepare your pancake. While it is cooking, combine above ingredients in your blender or food processor. Blend until smooth and well combined.

Alternatively, you could just dice the fruit and combine with other ingredients and have a "fruit salsa" of sorts as your topping.

Pour over your cooked pancake and enjoy!
4 Points+ and ever so yummy!

Apple Cinnamon Oatmeal Pancakes

My NewEST Variation of Oatmeal Pancakes




Ingredients: (times 2 (if you want! since I am making two, and keep them separate so you dont have to measure again later)
1/3 cup quick oats
sprinkle of ginger (about 1/16 teaspoon)
1/4 teaspoon cinnamon
1/4 teaspoon vanilla
1 egg
1/2 apple shredded/gratedenough water to get desired batter consistency
1 packet of splenda




for the apple, I peeled, cored and sliced, then shredded on my grater. I did about 1/2 on the smallest size and 1/2 on the larger size





If I am REALLY good, can I PLEASE have some?!? No Ma'am!


Mix all ingredients in a bowl and pour in to preheated skillet. Cook, flip and enjoy!


Sooooo Yummy, and smells so good while it is cooking!

French Toast Oatmeal Pancakes

My New Variation of Oatmeal Pancakes

Ingredients:

sprinkle of allspice (about 1/16 teaspoon)
1/4 teaspoon cinnamon
1/4 teaspoon vanilla
1 egg
enough water to get desired batter consistency
1 packet of splenda

Mix all ingredients in a bowl and pour in to preheated skillet. Cook, flip and enjoy!


Sooooo Yummy, and smells so good while it is cooking!
4 Points+ for the whole pancake!
Ed is not here to try this but I KNOW he will LOVE it!

Sweet Potato Pineapple Oatmeal

Yesterday morning I made  Pineapple Crisp for breakfast and I was pretty impressed. It got me thinking about a recipe my grandmother-in-law had made at dinner one night. It was a side dish with sweet potatoes and pineapple in it. And I just so happened to have some sweet potatoes I could repurpose.

Ingredients: makes 1 serving
1/2 cup (130g) Sweet potatoes, canned in syrup, syrup drained, then mashed.
1/2 cup pineapple tidbits, canned in own juice, juice drained
1/4 cup quick oats
about 2 tablespoons of water
1/8 teaspoon cinnamon
1 packet splenda with fiber

mix all of the ingredients together, stir to combine well. Since I noticed some of the moisture cooked out yesterday, I put a saucer over my bowl this morning before I heated it in the microwave to hold it in a bit. Heat in microwave for about 1-1.25 minutes. serve and enjoy =)

Pineapple Crisp Breakfast

At this point, I am sure you guys have figured out I LOVE me some easy, cheap fast recipes. This one is no different. It was originally posted over at and adapted from  Delightful Country Cooking as a guest post by Tina from Mom's Crazy Cooking.


Ingredients: (makes 1 serving)
1 cup chunk pineapple in its own juice, drained
1/4 cup quick oats
1 packet of splenda
sprinkle of cinnamon (about 1/8 teaspoon)
about 1 tablespoon of water

Mix ingredients in a microwave safe bowl and heat for 1 minute. Serve and Enjoy.
