Steak with Country Gravy, Hash Browns and Green Beans

 Randomly throwing things together in the kitchen.. I didn't get many pics as I wasn't exactly sure what I was doing! The hardest part of this meal is figuring out the right portions since they are on different scales !

For the steak:
10 oz raw top round steak cut in the thin strips
1 tablespoon white onion, diced
2 garlic cloves, peeled and diced
2 tablespoons olive oil

For the hash browns:
1 bag Alexia Hash browns
1 tablespoon veg oil
2 teaspoons olive oil

Gravy:
1 packet Pioneer country gravy

Green Beans:
your choice, we used canned french cut

Steak:

Preheat pan over medium heat, add oil, garlic and onion. cook til starts to brown. add steak, cook til done.

Hash browns:

Preheat pan over medium heat, add oil. when hot, follow directions on packaging.

Follow Direction on Gravy packet, easy peasy.
cook your green beans as desired, easy peasy.






Now for the details:
Steak: serves 4 @ 5 Points+ each
1/4 cup gravy = 1 Points+
Hashbrowns: serves 5@ 3 Points+ each.
(optional topping: 1'/8 cup shredded cheese @ 1 Points+ each)

I portioned out 1 serving of each and put in some green beans for a total of 10 Points+.
A very nice, satisfying meal!

From the Box Dinner: Freezer Queen Baked Beans with Pulled Pork BBQ

I normally avoid the large family size freezer meals like the plague. But when I was browsing the freeze aisle at Bilo, I saw this and thought "Why not at least FIGURE the PointsPlus?" And I was VERY excited. 1/2 cup = 3 PointsPlus. Not too bad!
So I bought it, cooked it, ate it. Very good! It has a nice smoky flavor, so I am excited to have leftovers! :)

I paired this with some leftover carrots from last night. I put them in a steamer bag and nuked them for about 3 minutes and mushed them up. Sprinkle with some cinnamon sugar and a spray or two of spray butter. Not too bad :)

Not the prettiest plate of food but tasty nonetheless

Taco Pie

Taco Pie. Yumm. This is super easy to make and only
takes a few ingredients. You can slim it down some using
alternate ingredients, but I was using what I had on hand.

Ingredients:
4 flour tortillas (soft taco size)
1 14.5 oz can diced tomatoes
1/3 cup water
1 lb 93/7 ground turkey
1 packet taco seasoning
3/4 cup Sargento PepperJack Cheese
1/4 cup cheese made with 2% milk

Preparation:
Brown Ground turkey in skillet while preheating oven to 375.
Once browned, add water, tomatoes and taco seasoning.
Cook til most of liquid is absorbed. Remove from heat.
In a pie tin or other dish, start by layering one tortilla, about 1/3 of meat mixture
and about 1/4 cup cheese, repeat until top layer is a tortilla, and top with remaining cheese.
Bake in over for about 7-10 minutes or until cheese is melted
