1 tablespoon Peanut Butter (PeterPan Reduced Fat = 3 PP)
1/2 small milk chocolate heart, grated. (closest I could find was on etools, says 2 pieces =4 PP, so 1/2 = 1PP)
**EDIT: it's been pointed out to me that this would work even if the Chocolate isn't shaped like a heart, lol **
spread peanut butter on tortilla, sprinkle with grated chocolate.
cook in preheated skillet (warm heat) that has been lightly sprayed with Pam. Cook for about 1 minute on each side.
Total for this occasional indulgence: 6 Points Plus.

Easy Pasta for One Mexican Style
The Ingredients
3/4 cup Ronzoni garden delight pasta
1/4 cup shredded cheese made with 2% milk
1 cup diced tomatoes
seasonings to taste
( This time I I used cumin, onion powder and diced jalapeƱos)
Preparation:
Boil pasta and cook til done; drain water
While pasta is boiling, combine tomatoes and jalapeƱos
cumin and onion powder in food processor. Pulse
until smooth. Warm in the microwave at 45 second increments
until hot. Stir. When pasta is done, reheat for another 45 seconds.
Top pasta with sauce and sprinkle with cheese.
This recipe can easily pumped up by adding more veggies to it, I was just using what I had on hand.

Eggs & Oatmeal
This simple little masterpiece is my go-to easy filling breakfast.
You could slim it down some using egg beaters, but I prefer it this way.
1 egg, pan fried in a light coating of PAM. Cooked over medium, with a piece of Kraft 2% Milk cheese Melted on top (Egg & Cheese = 3 PointsPlus)
1/4 cup quick oats, dash of cinnamon and sprinkle of sweetener of choice. (2-3 PointsPlus, depending on your sweetener) For these, I boil the water in the microwave, add it to my oats and spices until just a bit watery. then i put the oatmeal in the microwave about about 1 more minute. Makes them thick and porridge -ie. Eat with water and coffee. This holds me for about 4 hours. You can bulk it up some more if you need to with veggies or fruit, or you could save those for a mid morning snack.

From the Box Snack Attack: Krusteaz Muffins: Cranberry Orange
The Culprit:
These were lurking in the cabinet, so I figured they deserved to be baked up.
I was able to get about 30 mini muffins from my mix.
Based on those numbers the PointsPlus are as follows:
1 PP for one muffin (11.7 carbs, .7 fiber, .7 protein & 0 fat)
3 PP for two muffins (doubled)
4 PP for 3 muffins (tripled)

Apple and Cheese Quesadilla Snack
I think this is the perfect combination of warm and crunchy, light but satisfying.
Ingredients:
1 flour tortilla
1 laughing cow light swiss cheese wedge
cinnamon/sugar grinder
approx 1/4 cup diced apple without skin
Prep:
Preheat a skillet pan to medium heat. Spread laughing cow cheese wedge over tortilla. Cover with sprinkle of cinnamon sugar, top with apples and fold tortilla in half. Lightly spray pan with cooking spray and place tortilla in pan. Cook for about 1-2 minutes on each side until lightly browned. Top with a light dusting of cinnamon sugar and serve.
Total PP for quesadilla = 4 (rounding up since I am not sure of the exact content for the cinnamon sugar mix)

Savory Pineapple Ham
In the Crock Pot
Ingredients:
Ham:
Jennie-O Turkey Ham ( i had bought a 1.94 lb one, from Food Lion)
Pineapple Goodness:
1- 20 oz can crushed pineapple, in its own juice UNDRAINED
2 teaspoons vanilla
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 teaspoon roasted garlic and herb grill mates seasoning (or any garlic herb seasoning should do)
1 teaspoon chicken bouillon
Directions:
Dump can of pineapple and spices together in a mixing bowl, stir until well combined.
cover and refrigerate for about an hour (or longer if you want) so the flavors can combine.
Put Turkey Ham in bottom of crockpot and cover with pineapple mixture. Cook on low for about 4 hours (since it is precooked, you are really just letting the juices all combine!)
After cooked, take it out and put it in a pretty dish and TADA!!!
You've got HAM!
Now for the stats: on the wrapper, it states 2 oz is a serving size, but using the size I have, I figured I could get about 8 4oz servings, so for just the ham its 3 PP per serving. get yourself about 1/4 cup of the pineapple yumminess and it about 1 more PP. 4 PP for this is so worth it (to me! :) )

Easy Shake n Baked Chicken Nuggets
Does anyone else out there get less than thrilled when someone mentions Chicken?
My husband is in that crowd so I am always trying to make something that will
make him less apprehensive. And these Chicken Nuggets were born!
Ingredients:
I packet Shake n Bake ( I used pork since that's what I had on hand!)
.86 lb boneless skinless chicken breast tenderloins
Preparation:
Rinse chicken and pat dry with paper towel.
Cut chicken to desired size ( i cut the pieces above in half)
put them in the coating mixture.
Shake Shake Shake
lay out even spaced on baking sheet.
Now follow directions on the box!
As you can tell it barely used half of the shake n bake mixture. |
All baked and crispy! |
you can eat half of what's there for 6 PointsPlus.
