Coconut Baked Oatmeal

Recently in the Weight Watchers Meeting room, we rolled out a new product and I was so happy to finally try it. Creamy Coconut Smoothie Mix. YUM! I think any protein powder would work here but this is soooo good, who needs to mess up a good thing? Not this chick!


Ingredients:
1 1/3 cup old fashioned oats
1 Creamy Coconut Smoothie Packet
4 Eggs
1/2 cup milk (1%)
15g or 2 tbsp shredded coconut


Preheat oven to 375. Spray 8x8 glass baking dish with pan spray.
Mix together the oats and smoothie mix. Separately mix together the eggs and milk. Combine egg and oat mixture, pour in to baking dish. Top with coconut and bake for 20-25 minutes or until golden brown and cooked through. YUMMY!




4 servings at 6 PointsPlus each!

Pina Colada Chicken

Drool worthy? I think so. Super Easy and Super yummy.
Recipe inspiration from Healthy Delicious. I have made it the fried way, but I honestly think I like the baked version better. Less mess =)

Ingredients:
326 g Thin Sliced Boneless Skinless Chicken Breast(Sorry! grams easier than ounces at this point. I started with .92 lb chicken, but didnt use 3.2 oz?)
1/3 cup panko bread crumbs
30g sweetened coconut flakes
1/2 cup pineapple juice (used about 1/4 cup)

Preheat oven to 400.
Mix panko and coconut together
Coat both sides of chicken in pineapple juice then in crumb mixture. Place on baking sheet lined with foil.
Bake for 15-20 or until cooked through and golden brown. (it is perfectly acceptable to stand by the oven and savor the smell!) Carefully remove from foil so the bottom layer of coconut doesn't stick!

this was SUPER yummy. I will be doing this again. I will get Ed's verdict when he gets home from school :)

Coconut Shrimp

Ed's Birthday was this past week and in lieu of going out to eat, I figured we would spend that money at the grocery store and cook at home. I know he had been eyeing some seafood, so I was anxious to see what he would pick. Well =) My lovely came home with about 2.5 lbs of shrimp (not the tiny ones, but not the super huge one either, because it quite frankly creeps me out when they are that big!)

Well that was about about 2 pm and then he ate a frozen pot pie :pout: so me being the super "sweet" (impatient) wife I am, I decided to make an appetizer to tonights dinner (which will probably just be steamed shrimp).

Ingredients:

1/2 pound raw shrimp, peeled and deveined
1/4 cup breadcrumbs
3 tablespoons coconut flakes
1/4 coconut milk

Preheat oven to 375.
If the shrimp aren't already peeled and deveined...DO IT!

Dry them on a paper towel

Prep your dipping station:
Mix the bread crumbs with the coconut in one dish
Coconut milk in the other
line a baking sheet with foil and lightly spray with PAM


Dip the shrimp in the milk coating both sides
then in the crumb mix, then to the pan



As you can see, there is still quite a bit
of the dipping ingredients left, and the Points+
Calculation is based on using it all. I guess you could
"re-dip" them


Bake at 375 until tails are red =) and shrimp is fully cooked
(about 5-10 minutes, flipping once)



Serve!

Now if you wanted to eat all of them, it would be 10 Points+
1/2 of it is 5 Points+
